Holiday RV Recipe: The Perfect Meal Between Christmas & New Year’s

It’s so difficult to eat well during the holidays – especially if you’re traveling a lot and don’t have the benefit of using your own kitchen and recipes. Our family spends the week between Christmas and New Year’s eating as “fresh and clean” as we can after a month of rich foods and heavy sweets. One of my favorite recipes for this time of year is Pan Seared Salmon and Zucchini. This mouthwatering recipe is simple to prepare, uses minimal ingredients, and can easily be made either the inside or outside kitchen of your new or used RV. Pan Seared Salmon & Zucchini

Ingredients:

  • 2 salmon fillets (about 6 ounces each), skin-on
  • 2 medium-sized zucchini, sliced into rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon lemon zest (optional)
  • Fresh herbs (such as dill, parsley, or chives) for garnish
  • Lemon wedges for serving

Optional lemon butter sauce:

  • 2 Tablespoons butter
  • 1/2 lemon

Directions:

  • Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, and any optional seasonings like garlic powder or lemon zest.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced zucchini and cook for about 4-5 minutes, stirring occasionally, until the zucchini is tender and lightly browned. Season with salt and pepper to taste. Remove the cooked zucchini from the skillet and set it aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Place the salmon fillets in the skillet, skin side down. Cook for about 4-5 minutes on the first side until the skin is crispy and the salmon easily releases from the pan.
  • Flip the salmon fillets and cook for an additional 2-3 minutes on the other side or until the salmon reaches your desired level of doneness. Cooking times may vary depending on the thickness of the fillets.
  • Return the cooked zucchini back into the skillet with the salmon – not to cook, but to let the temperature of the pan re-warm them just before serving.
  • Garnish or sprinkle with fresh herbs, if using, and serve the pan-fried salmon and zucchini hot, with lemon wedges on the side.
  • If you’d like a little extra flavor, you can quickly make a lemon butter sauce to go with it. In the same skillet you’ve used for everything else, melt 2 tablespoons of butter over medium heat. Add a squeeze of lemon juice and stir. Pour the lemon butter sauce over the salmon and zucchini just before serving.
